There is the official Java EE tutorial.

There must be thousands of tutorials on the internet.

There must be hundreds of books.

Just start reading.

I would not be concerned about starting with something not very
recent.

Learning servlet, JSP and taglibs is something you should do
anyway even though JSF and facelets exist today.

Most of the books out there are just too slow and dwell too much on
syntax.

In my experience Java EE / Java web technology books rarely spend
much time on syntax.

I have an extensive software development experience in C and
other languages, also I am an impatient type who wants to see the big
picture from the start. Hence I need to set up the whole development
environment and play with simple demos that show all the concepts
used in a web development.

Reading some Java code samples detached from a quick hands-on
playground is just not for me. I never learned much this way in the
past.

There are books that have exercises and runnable examples.

Most of the books include Java samples about theory like sort
this or that, print this or that, etc. I need all concepts used in a
web design.

????

If you are looking at Java books, then probably yes.

But not Java EE / Java web technology books.

First you learn Java.

And then you learn Java EE.

I just came across one book "Professional Java for Web Applications"
that has many of the things I am looking for, like it provides demos
for each chapter and the names of free software used to run them.

Wrox books are often very good.

                                                                  But
there are many holes in the explanations that will probably lead me
into wasting a lot of time when I try to test them out. Probably, I
would have to keep an experienced Java coder around me to help me out
and this could not be practical.

How much time do you plan on using to learn Java EE?
